Pumpkin Pancakes with Warm Apple Topping

These healthy pumpkin pancakes topped with warm cinnamon apples are the coziest breakfast for a chilly fall morning. Easy to make, healthy, and filling, everyone will love them!

Ingredients
Pancakes
- 1 cup milk of choice (we used unsweetened oat milk)
- ¾ cup pumpkin puree
- 2 large eggs
- 2 Tbsp maple syrup
- 1½ cup old fashioned rolled oats
- 1 tsp ground cinnamon
- 1 tsp pumpkin pie spice
- 1 tsp baking powder
- ¼ tsp salt
Warm Apple Topping
- 2 McIntosh apples, diced small
- 1 tsp coconut oil
- 1 tsp ground cinnamon
Directions
- Combine pancake ingredients in a high-powered blender. Blend on medium-high until batter is smooth and no oat chunks remain.
- Heat a large nonstick skillet over medium heat. Grease with cooking spray. Scoop ¼ cup of batter for each pancake and cook about 2-3 minutes on each side. This recipe makes 10-12 pancakes.
- Prepare cinnamon apples while pancakes are cooking. Heat coconut oil over medium in a small skillet. Add apples and cinnamon, stirring to combine. Cook for about 5 minutes until the apples are fragrant and fork-tender.
- Serve pancakes with apple topping and maple syrup.
