Serves: 2-4

Ingredients

Pancakes
    • 1 cup milk of choice (we used unsweetened oat milk)
    • ¾ cup pumpkin puree
    • 2 large eggs
    • 2 Tbsp maple syrup
    • 1½ cup old fashioned rolled oats
    • 1 tsp ground cinnamon
    • 1 tsp pumpkin pie spice
    • 1 tsp baking powder
    • ¼ tsp salt

Warm Apple Topping
    • 2 McIntosh apples, diced small
    • 1 tsp coconut oil
    • 1 tsp ground cinnamon

Directions

    1. Combine pancake ingredients in a high-powered blender. Blend on medium-high until batter is smooth and no oat chunks remain.
    2. Heat a large nonstick skillet over medium heat. Grease with cooking spray. Scoop ¼ cup of batter for each pancake and cook about 2-3 minutes on each side. This recipe makes 10-12 pancakes.
    3. Prepare cinnamon apples while pancakes are cooking. Heat coconut oil over medium in a small skillet. Add apples and cinnamon, stirring to combine. Cook for about 5 minutes until the apples are fragrant and fork-tender.
    4. Serve pancakes with apple topping and maple syrup.
